SAMI is good for installing mods.But you can also use IMG Tool 2.0 to install the mods.But this is a slower way.SAMI is the fastest

If I got this right, you use the right stick on the controller to change from hover to forward flight.

You need to destroy anything to fill the meter

I'm fucked up on the start,I press on the gas then when i want to turn at curves the car is damaged and all from the start

You could do it with a cheat too,but i don't want cheats

Don't edit your script because san andreas may will crash.But i'm not against anyone edit it,but make a backup before you edit it

You need an IMG Tool v2.0 to put them on the right place.If you have one open gta3.img (it is in models) with your img tool and then find your files.If you want to put he mods you need to right click on that file there and replace with the one for the mod.ALWAYS BACKUP YOUR FILES BEFORE EDITING THEM!!!!!!!!!!!!!!!
