Nice (huge) poll, I picked Shopping Cart Racing (for the Jackass style of course! :P), Paintball (love it in real life and want to play it in GTA) and last but not least; Eating Competitions (those would just be awesome and hilarious at the same time). Hope at least some of these ideas get incorporated into GTA IV...
