Yeah single weapons are more fun, anyway there are 2 solutions to this: 1. Use the Savegame Editor to lower the weapon skill to 0, but this is only temporary as the skill will increase again once you start firing those weapons. 2. There's a mod at GTAinside / GTA-WorldMods that makes all weapons single without affecting the skill.
