Blowing the train up would only happen in a mission in my opinion since it would be chaos to actually blow up a train, they would have to stop all other trains from moving etc.

If the cops recognize a stolen car the game will be quite boring when free roaming since you will always be cahsed by the cops

I think the subways are going to be very similar to the ones in GTAIII, the only difference being that you can do stuff throughout the journey like whack people over the head and tell them to move.
